Baladi ghee made from cow's milk: lighter in taste than the buffalo version and gentler in aroma, golden yellow in colour. This is the samna for everyday cooking, where you want the richness without it taking over the dish. Used for frying onion and rice, and in baking that needs a clean-tasting fat — basbousa, ghorayeba, fiteer — and often preferred for children and lighter food. Keep it in a sealed jar in a dry place away from sun, or refrigerated in hot weather, when it sets harder. Use a clean dry spoon each time. Choose buffalo samna if you want the strong traditional aroma; 500 g tubs are available in both.
