The same fresh qarish cheese in a 500 g tub: white, soft, lightly salted, mild enough that anything you add to it comes through — olive oil, tomato, rocket, cumin or chilli. The smaller size suits a small household, a first try, or buying fresh more often rather than keeping a large tub in the fridge. Spread on baladi or bettaw bread at breakfast, mashed with tomato and onion as a salad, used to fill fiteer and sambousek, or spooned over hot fava beans. Refrigerate from the moment it arrives, in a sealed box, kept in its own liquid if there is any. A full kilo is available if you eat it daily.
