Cow vs buffalo baladi samna — which to use when

Buffalo samna is stronger in aroma and richer in taste; cow samna is lighter and gentler. What you are cooking decides, not the price.

What actually differs

Both are baladi ghee; the difference is the milk. Buffalo samna comes from buffalo milk — richer, so the ghee has a stronger, clearer aroma and a deeper taste, creamy white in colour. Cow samna is golden yellow, gentler in aroma and lighter in taste.

In the kitchen the question is not which is better but whether you want the samna to be part of the dish or to support it from behind.

When to use buffalo

Dishes where the aroma is part of the food: tagines, rice, fatta, molokhia and stuffed vegetables. A spoonful at the end of cooking changes the whole dish.

And in season: kahk, pastries and petit fours, where the aroma is what people remember.

When to use cow

Everyday cooking that needs a clean-tasting fat: frying onion, plain rice, soups and anything fried.

And sweets whose main flavour is not the fat — basbousa, ghorayeba, fiteer — or cooking for children and anyone who finds the buffalo aroma too strong.

Storing it, and telling it is baladi

Baladi samna sets firm when cold, melts quickly over heat, and announces itself as soon as the jar opens. Keep it in a sealed jar in a dry place away from sun, or refrigerated in hot weather, where it will set harder — that is normal; leave it out for a few minutes before use.

Use a clean dry spoon every time: water is the fastest way to spoil any ghee.

Frequently asked questions

Which samna is better for kahk?
Buffalo, because its aroma is what distinguishes kahk and pastry. Cow samna works too if you prefer a lighter result or are baking in quantity.
Can I mix the two?
Yes, and many people do: half buffalo for the aroma, half cow to soften it. Mixing affects nothing in the cooking.
Why does samna harden in the fridge?
Baladi ghee sets in the cold. It is entirely normal and not a sign of any fault — leave it out for a few minutes or warm it gently and it loosens again.
