The same baladi buffalo ghee in a 500 g tub: rich and strongly aromatic, firm when cold and quick to melt. The smaller size suits a kitchen that reaches for samna on occasions rather than every day — tagines, fatta, rice, molokhia and festival kahk — or if you want to taste the difference between buffalo and cow before buying a kilo. Keep it sealed in a dry place away from sun, or refrigerated in hot weather. Use a clean dry spoon each time. The kilo tub is better value if you cook with it often.
