A whole 4 kg wheel of Mallawi cheese — the way Upper Egyptian cheese is actually sold where it is made: one large firm plate you cut at home as you need it. The best value for a big household, for splitting with someone, or if you want to age part of it yourself. The cheese comes from Mallawi in Minya: firm, naturally salty, sliced for breakfast and grated over pastries, pasta and potatoes, and it sharpens the longer it keeps. Divide the wheel into portions, wrap each one separately and refrigerate in a sealed box. Available by the kilo too, fresh or aged, if the wheel is more than you need.
