Mallawi cheese from Mallawi in Minya, Upper Egypt — the January 2026 batch, in a 500 g pack: the same cheese sold by the kilo, in half the quantity. Firm and dense, pale yellow, and properly salty the way Upper Egyptian cheese is meant to be. The smaller pack suits a first try, a small household, or taking some with you when you travel. It slices thin for breakfast with shamsi bread, tomato and olive oil, grates over pasta, pastries and oven potatoes, and plenty of people simply eat it with tea. Keep it in the fridge, well wrapped — the aroma is strong and will find its way into whatever is next to it.
