Mallawi cheese from Mallawi in Minya, Upper Egypt — the January 2026 batch, which has been ageing since and carries a sharper, saltier, more concentrated flavour than the fresh wheel. Firm and dense, pale yellow, it slices thin for breakfast with shamsi bread, tomato and olive oil, and grates well over baked pasta or potatoes. Because it is aged, a thin slice goes a long way. Keep it refrigerated in a sealed box or well wrapped, away from anything that picks up odours; leave it out for fifteen minutes before serving if you prefer it softer. Choose the fresh Mallawi instead if you want a milder, less salty cheese.
