Shamsi bread, soft — 1 loaf
40 EGP / piece
Minimum order: 5
Shamsi bread is the bread of Upper Egypt: the dough is left to rise in the sun — which is where the name comes from — and baked in a traditional oven, giving a thick loaf with a golden crust, a soft crumb and the faint sourness of a long ferment. Thicker and more filling than ordinary baladi bread, it is eaten with Mallawi, qarish and mish, torn into fava beans, lentils and molokhia, or split and filled; it holds up to dipping without falling apart. Best eaten the day it arrives. To keep it, let it cool completely, wrap it well and freeze, then reheat over low heat or in the oven. Bettaw bread is the thinner, more everyday option.
