Pieces of honeycomb: honey exactly as the bees left it, in the wax, unextracted. Each piece is wax full of honey — eaten comb and all, or pressed so the honey runs out. This is honey in its closest-to-source form, and many people prefer it for the look and the complete flavour: on bread, over cheese, beside yoghurt and nuts, or set out as a dish for guests. Chewing the wax and then swallowing or discarding it is a matter of preference. Keep it closed in a dry place away from sun and heat, which melts the wax; no refrigeration needed. Extracted honeys — sidr, citrus, clover and marjoram — are also available.
