Clover honey, from clover blossom: pale, medium-bodied, and very sweet and gentle with no sharpness — the most common honey in Egypt and the one most households keep. Made for everyday use: on bread and toast, in yoghurt, tea and warm lemon, in baking, and with tahini as the classic Upper Egyptian breakfast. Because the flavour is neutral it is the best choice if you want honey sweet, without bitterness or a strong aroma. Keep it sealed in a dry place away from sun; no refrigeration needed. Crystallising over time is normal and warm water around the jar reverses it. Citrus honey is more aromatic, sidr stronger.
