Citrus blossom honey, from orange, lemon and tangerine flowers: pale gold, thinner than sidr, with a high, clearly citrus aroma that reaches you as soon as the jar opens. This is the honey most people — children especially — take to, sweet and gentle with no bitterness. Eaten on bread and toast, stirred into yoghurt, tea and drinks, used in baking, and very good with qarish cheese at breakfast. Keep it sealed in a dry place away from sun; no refrigeration needed. Crystallising or setting over time is normal in natural honey; warm water around the jar loosens it. Clover honey is milder, sidr stronger, and honeycomb is also available.
