The same medium-crack dash metallet freekeh in a one-kilo pack: roasted green wheat, finely cracked, quick to cook and creamy when simmered in chicken or meat stock. A kilo is the sensible size if freekeh is a regular part of your cooking, if you cook for numbers, or for Ramadan and family occasions. Good for soup, for cooked freekeh and for stuffing; the smoky taste is the same across every crack. Keep it in a sealed jar in a dry place away from sun and humidity, and rinse and pick it over before cooking. A 500 g pack and a coarse grade are also available.
