Medium-crack dash metallet freekeh in a 500 g pack: roasted green wheat cracked finer than the coarse grade, so it cooks faster and comes out closer to a risotto or a light porridge when simmered in stock. Good for soup, for freekeh cooked with chicken or meat, and for stuffing — and easier for children, since the grain is softer. The smoky flavour is exactly the same as the coarse grade; only the texture differs. Keep it sealed in a dry place away from sun, and rinse before cooking. Available by the kilo, and in the coarse crack if you want more bite.
