Freekeh is green wheat roasted while still soft, which gives it a smoky taste and the faint scorched aroma that marks it out. This coarse megawez grade is cracked wide, so it keeps its bite after cooking instead of turning to mush. Cooked like rice with chicken or meat stock and samna, it is the dish served with pigeon or stuffed chicken, and it also makes a soup and a stuffing. The coarse grain is the one to choose when you want to feel the grains in the dish. Keep it in a sealed jar in a dry place away from sun, and rinse and pick it over before cooking. Finer cracks are also available.
