Coarse-cracked dash megawez freekeh in a 500 g pack: roasted green wheat, widely cracked, smoky, and with grains you still feel after cooking. Cook it like rice in chicken or meat stock with samna, or use it for soup and stuffing; it is what goes alongside pigeon and stuffed chicken. This size covers a meal or two, or a first try while you work out which crack you prefer. Keep it sealed in a dry place away from sun, and rinse and pick it over before cooking. A finer crack and a one-kilo coarse pack are also available.
