Baladi butter from fresh cow's milk: pale gold and lighter in taste than the buffalo version, so it works for everything without dominating. Spread it on bread and toast at breakfast, use it in cooking, pastry and sweets that need a clean-tasting butter, or melt it down into samna at home. A practical choice for a household that bakes and cooks daily. Keep it refrigerated in a sealed box, and portion and freeze part of it if you buy a kilo. Leave it out briefly before spreading. Buffalo butter is the richer, deeper option.
