Bettaw bread, thin — 1 kg

160 EGP / kg

Bettaw is Upper Egyptian corn bread, the everyday bread in many Saidi homes. This thin, wide version carries more flavour and takes up dips quickly. It tastes distinctly of corn, faintly sweet and nothing like white bread. Eaten with qarish, Mallawi and mish, torn into fava beans and lentils, and — in one of the best-known Upper Egyptian breakfasts — with black honey and tahini. Keep it well wrapped in a dry place, or freeze it and reheat over low heat or in the oven; corn bread dries faster than wheat, so wrapping matters. Also available in a 500 g pack, and alongside shamsi bread if you prefer a thick loaf.
